Singapore Chilli Crab: Authentic Hawker-Style Home Recipe

Method
Prepare the rempah by blending the soaked dried chillies, fresh chillies, shallots, garlic, ginger, and belacan into a smooth paste. Add a little oil if needed to help the blades turn.
Heat 4 tablespoons of oil in a large wok over medium heat. Fry the rempah paste until the oil begins to separate from the paste (pecah minyak) and it becomes fragrant and darkened.
Stir in the tauchu (soybean paste) and fry for another minute. Add the tomato ketchup, chilli sauce, and sugar. Mix well.
Increase the heat to high and add the cleaned crab pieces. Toss to coat every piece of crab thoroughly in the spice paste.
Pour in the chicken stock or water. Bring to a boil, then cover the wok with a lid. Let the crab steam in the sauce for 8 to 10 minutes until the shells turn bright orange and the meat is cooked.
Remove the lid and stir in the cornstarch slurry to thicken the gravy to your desired consistency.
Turn off the heat or lower it significantly. Pour the beaten eggs in a slow circular motion over the sauce. Wait 15 seconds, then gently swirl the eggs to create silken ribbons.
Stir in the lime juice and garnish with fresh coriander and spring onions. Serve immediately with deep-fried mantou buns.
Notes
Always use live mud crabs for the best texture; frozen crab can become mushy in this heavy sauce.
Don't skip the tauchu (fermented soybean paste); it provides the essential umami backbone that defines the Singapore style.
The 'pecah minyak' stage is crucial; if you don't fry the rempah long enough, the sauce will taste raw and acidic.
If the sauce is too spicy, add an extra tablespoon of sugar or tomato ketchup to balance the heat.
