Singapore Black Pepper Crab Recipe: A Zesty Hawker Classic

A national treasure of Singapore, this black pepper crab is bold, buttery, and intensely aromatic. Unlike its saucy chili crab cousin, this version features a concentrated, peppery glaze that clings to succulent mud crab meat for a sophisticated heat.

Method

  1. Prepare the crabs by cleaning them thoroughly and chopping into quarters. Crack the claws slightly with a mallet to allow the sauce to penetrate.

  2. In a dry wok, toast the whole black peppercorns over medium heat until fragrant, then crush them coarsely using a mortar and pestle. Do not use pre-ground pepper as it lacks the essential oils.

  3. Heat 2 tablespoons of oil in a wok. Flash-fry the crab pieces over high heat until the shells turn bright orange. Remove and set aside.

  4. Wipe the wok and heat the remaining oil and the butter. Once the butter foams, add the minced shallots, garlic, ginger, and curry leaves. Sauté until the 'rempah' (aromatic base) is fragrant and golden.

  5. Add the crushed black pepper to the wok and stir for 30 seconds to release the spice into the fat.

  6. Return the crab pieces to the wok. Add the oyster sauce, dark soy sauce, light soy sauce, and sugar. Toss vigorously on high heat to coat every piece of crab in the peppery glaze.

  7. Add a splash of water if the mixture is too dry, then cover with a lid for 2-3 minutes to ensure the crab is cooked through.

  8. Remove the lid and give it a final high-heat toss until the sauce is thick and sticky, clinging to the shells. Serve immediately.

Always use live mud crabs for the best texture; frozen crab often becomes mushy when cooked with heavy spices.

Toasting the peppercorns before crushing is the secret to the deep, smoky aroma found in Singaporean seafood restaurants.

The curry leaves are a local touch that adds a subtle citrusy undertone which balances the heat of the pepper.
